Pink Crunchy Chickpea Pizza
Ingredients
Jalapeno cashew cream:
- 1 cup cashews
- 4 tbsp water
- 3 tbsp lemon juice
- 1 tbsp apple cider vinegar
- half of jalapeno or whole
- A pinch of salt
- A pinch of pepper
- Add small amount pink dragonfruit if want pink color
- Directions: blend everything until smooth
Cauliflower pizza crust:
- 2 cups shredded cauliflower
- 4 tbsp chia seeds
- 8 tbsp water
- ½ cup oat flour
- ½ cup almond meal/flour
- 2 tbsp nutritional yeast
- 3tbsp garlic powder or 4 garlic cloves minced
- 1 tsp sea salt
- 2 tsp pepper
Instructions
- Preheat oven 400 degrees
- Take your 4 tbsp chia seeds and 8 tbsp of your water - mix well in small bowl and let sit for 5+ min
- Take all pizza crust ingredients and mix in a large bowl, knead with hands
- Take cauliflower dough and form into pizza crust shape on parchment paper on cooking sheet. How thick or thin pizza crust will determine baking time. Bake for approximately 30-35min, keep an eye out for it after 25min
- Once baked let cool for 5-15min
- Add cashew cream on top with Saffron Road Bombay Spice Crunchy Chickpeas
