Veggie Tikka Pilaf
Veggie Tikka Pilaf
  • 2 cups basmati rice (or any rice of choice)
  • 1 packet of Saffron Road’s Tikka Masala Simmer Sauce
  • 2 cups frozen vegetables
  • 4 cups of water
  • 1½ – 2 tsp salt (on your preference of how salty you like it)
  • 4 tbsp extra virgin olive oil
  1. Wash rice and soak in water for half an hour
  2. In a pot combine the oil, vegetables and Saffron Road Tikka Masala Simmer Sauce . Cook on medium heat for 10 minutes.
  3. Add water and salt and bring to a rapid boil on high heat.
  4. Rinse the rice and add to the boiling water, giving it a quick stir.
  5. Allow to come to a full boil for about 5 minutes and turn the heat on medium putting a lid on the pot half way.
  6. When the water partially evaporates and you see little bubbles through the rice, cover full and turn heat on low. Keep on low heat for approx 20 minutes or until rice is done.
  7. Fluff up rice with a fork and turn heat off. Can be served with yogurt or as seen here, it’s served with Chicken Tikka.
