Tortellini & Vegetable Soup

Tortellini & Vegetable Soup
Ingredients
  • 1 medium to large onion chopped in chunks
  • 3 garlic, diced finely
  • 4 tbs extra virgin olive oil
  • 2 cups of crushed tomatoes
  • 1 heaping tsp oregano
  • 1 bay leaf
  • 1 chunk of ginger, peeled (about ½ inch thick)
  • ½ tsp dry chilli flakes
  • ¼ tsp black pepper
  • ½ tsp salt
  • 4 carrots, pealed and chopped
  • 2 small or 1 medium zucchini, chopped
  • 3 celery sticks, chopped
  • 1 cup of water
  • 1 Saffron Road Chicken Broth
  • 2 cups of 4 cheese tortellini, uncooked
Instructions
  1. Heat oil and add onions, garlic and ginger and sauté until onions are half cooked.
  2. Add all vegetables (carrots, zucchini, celery) and spices.
  3. Cook for approx 10 minutes on medium heat.
  4. Add water, chicken broth and crushed tomatoes. Turn heat on high and bring to a boil.
  5. Add tortellini and reduce heat to medium high. Cook for approx 8-10 minutes or until tortellini is cooked and has softened.
  6. Adjust salt and pepper to taste. Sprinkle with shredded cheese if you like, serve hot and enjoy!
