The humble soba noodle didn’t start out humble at all. This modern day favorite of millions of Japanese and enthusiastic fans around the world began as a dish reserved only for the Shogun and his feudal lords, the Daimyo, during the Edo period in Japan. Which means the world didn’t have its first taste until well after 1868 when their rule finally ended.
