Tan Tan ramen has a history in both Japan andChina. Originally called dandan noodles or “peddler’s noodles” in China, it refers to a type of carrying pole that was carried by street vendors who sold the dish. Ultimately its fame carried it all the way to Japan,where they fell in love with this spicy Szechuancreation. Ours is made with a carefully simmeredbone broth, bok choy, red chilies, dark meatchicken and fermented bean paste – Yum!
