One Pot Quinoa Stir Fry

One Pot Quinoa Stir Fry
Ingredients
  • 1 cup quinoa (organic tri color is used in this recipe but plain will do also)
  • 1 cup mix bell peppers, chopped (red, yellow, orange)
  • 1 cup fresh mushrooms, sliced
  • 1 cup baby corn
  • ½ cup frozen sweet peas
  • 1 medium onion
  • 2 garlic, peeled and chopped
  • 4 tbs coconut oil
  • 1½ cup Saffron Road Chicken broth
  • 1 pack Saffron Road Korean Stir Fry Simmer Sauce
  • ½ tsp salt
Instructions
  1. Melt coconut oil on medium heat and add onions and garlic.
  2. Cook until onions are half done and add all your vegetables. Saute them for approx 5 minutes.
  3. Increase heat to high and add salt, broth/or water and Korean stir fry simmer sauce.
  4. Give this all a good mix and then add the quinoa.
  5. Bring to a vigorous boil for approx 5 minutes.
  6. Reduce heat to medium and cover half way with lid until ¾ of the liquid has boiled off.
  7. Turn heat to the lowest and put a tight light on your cooking dish and simmer for approx 15 minutes or until quinoa is done.
  8. Serve warm and enjoy!
