Lemongrass Basil Vegetable Skewers

Lemongrass Basil Vegetable Skewers

Ingredients
  • ½ purple cauliflower
  • 1 bell pepper (cut into 1 inch pieces)
  • 8oz. of button mushrooms
  • ½ of medium red onion, sliced into thick 1 inch pieces
  • 1 package of Lemongrass Basil Simmer Sauce by Saffron Road
  • 2 cups of cooked rice
Instructions
  1. Combine all ingredients into a cut bowl.
  2. Open Saffron Road's Lemongrass Basil Simmer Sauce and pour onto veggies. Use a spoon to stir until all veggies are coated with the simmer sauce.
  3. Let marinate for at least 30 minutes
  4. Place marinated veggies onto metal skewers.
  5. Place skewers onto hot grill. Watch veggies closely and give the skewers a quarter turn every 3 minutes until veggies are cooked.
  6. Divide rice between two plates. Divide veggies between two plates.
  7. ENJOY!
Notes
**Any color cauliflower will work in this recipe.**If it's chilly outside, this recipe is easily adaptable. You can BROIL your skewers in your even.
