Gooey Peanut Butter & Chickpea Snack Bars

These bars are great on-the-go for breakfast or as a snack. Packed with protein-rich peanut butter and the crunchiness of chickpeas, pepitas and pistachios, they really do satisfy the craving for something both delicious and healthy.
  • 1 + ⅓ cups quick rolled oats
  • ¼ cup peach puree (or any fruit puree)
  • 2 tablespoons chopped pistachios
  • ⅓ cup pepitas (pumpkin seeds)
  • ⅔ cups prunes or raisins
  • 1 cup peanut butter
  • ⅓ cup honey
  • Saffron Road Falafel Crunchy Chickpeas
  • ⅔ cup Dang Toasted Coconut Chips , broken into small pieces
  1. In a large bowl, combine the rolled oats, fruit puree, pistachios, pepitas and raisins. Add the peanut butter and honey and combine again until all of the ingredients are completed and evenly coated with the peanut butter. Fold in the Saffron Road Falafel Crunchy Chickpeas and Dang Coconut Chips .
  2. Line a 9 x 9 baking dish with parchment paper and spread the mixture into the pan evenly. Refrigerate overnight.
  3. Cut into 8 squares or bars and keep best when refrigerated.
