Crunchy Chickpea, Mango & Coconut Salad

This fresh and crunchy salad is great for a party, especially when served in small bowls or cups with the pretzel crisps alongside as an edible ‘spoon’.
Ingredients
- 15 ounces cooked sweet corn
- 1 cup diced mango
- ¼ teaspoon sea salt, or to taste
- 4 tablespoons chopped fresh cilantro
- 1 cup Saffron Road Chipotle Crunchy Chickpeas
- ½ cup Dang brand toasted coconut chips
- Pinch fresh chili powder (optional)
- 1 cup Pretzel Crisps Thin Crunchy Pretzel Crackers
Instructions
- Place the corn and mango in a medium size bowl or semi-deep dish. Add the salt and fresh cilantro. To prevent them from softening, just before serving, add the Chipotle Crunchy Chickpeas and the Dang coconut chips. Sprinkle with fresh chili powder, if desired. Serve Pretzel Crisps on the side to serve as edible scoops.
