Cucumber Dill Avocado Tuna Salad

Ingredients
  • 1 large ripe avocado
  • 1 tablespoon stone ground mustard
  • 1 tablespoon fresh lime juice
  • ⅛ teaspoon sea salt, to taste
  • 2 teaspoons fresh dill, to taste
  • ½ cup red bell pepper, finely chopped
  • ½ cup cucumber, finely chopped
  • 1 small carrot, peeled and finely chopped (about ¼ cup)
  • ½ cup green onion, chopped
  • 2 (5-ounce) cans tuna, drained
  • 1 bag Saffron Road Cucumber Dill Lentil Chips
Instructions
  1. Mash the avocado, mustard, lime juice, sea salt and dill together in a bowl using a fork.
  2. Add the bell pepper, cucumber, carrot, green onion, and tuna, and stir well to combine.
  3. Taste tuna salad for flavor and add more lime juice, mustard, and/or sea salt to taste. Serve with Saffron Road Cucumber Dill Lentil Chips
